Two Thanksgivings I Will Never Forget, plus my favorite Corn Pudding recipe

Thanksgiving never goes exactly as planned. Here are two of my favorite "well, THAT happened" holiday memories, plus the one recipe I make every single year.

I love Thanksgiving. The food, the people, the chaos. And honestly? The years when something goes wrong are the ones we still laugh about. So in the spirit of the season, here are two Thanksgivings I will never forget.

The year the oven died

One year we had guests visiting all the way from Sweden. They came to experience a real American Thanksgiving, so we wanted to show them the whole thing. Turkey, sides, all of it.

And then... the oven died. On Thanksgiving. With a turkey that still needed to cook.

So what did my parents do? They carried that turkey next door and cooked it at the neighbors' house! Our Swedish guests got a very authentic American Thanksgiving: a little panic, a lot of teamwork, and neighbors who saved the day.

The year the casserole caught fire

Another year, we visited Kathleen's dad in Texas, where he hosted Thanksgiving for 30 people. Thirty! The kitchen was busy, the house was full, and the sweet potato casserole was in the oven doing its thing.

Until it wasn't. We somehow lit the sweet potato casserole on fire, and flames were coming OUT of the oven. We almost burned the house down. And here's the best part: no one noticed.

We threw salt on it, the flames went out, and crisis averted. The only side effect? An extra salty sweet potato casserole. 😂

My favorite: Corn Pudding

Every family has that one dish, and for me it's Corn Pudding. It's a little unique, it's comforting, and it's my absolute FAVORITE thing on the Thanksgiving table. Here it is, straight from my mom's recipe card, so you can add it to your table this year!

Mom's Corn Pudding

Serves 4 to 6

Ingredients:

  • 1 can (about 15 oz) creamed corn
  • ½ small can evaporated milk (regular milk works too)
  • 2 eggs
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • Pinch of salt
  • Small slivers of butter, for the top

Instructions:

  1. Preheat your oven to 350°F and lightly butter a casserole dish.
  2. In a bowl, beat the eggs, then stir in the creamed corn, evaporated milk, flour, sugar and salt until combined.
  3. Pour the mixture into the casserole dish and dot the top with small slivers of butter.
  4. Set the casserole dish inside a larger baking pan and fill the pan with about an inch of hot water.
  5. Bake uncovered for about 1 hour, until the center is set and the top is lightly golden.

Happy Thanksgiving from my family to yours

Whether your turkey turns out perfect or you end up cooking it next door, I hope your Thanksgiving is full of good food, good people and at least one story you'll laugh about for years. I'm so grateful for each of you. Thank you for being part of my world!
